Ingredients (Serves 2–3 kids)
- 1 cup cooked Cooky Choice Rice (white or brown)
- 1/2 cup boiled sweet corn kernels
- 1/4 cup finely chopped spinach or bell peppers (optional for nutrition boost)
- 1/2 cup milk or cream
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1 tbsp butter
- 1 tbsp all-purpose flour (optional, for thickening)
- Salt and pepper to taste
- A pinch of mixed herbs or oregano (optional)
Method
- Prepare the base
- In a pan, melt butter.
- Add flour and stir to make a quick roux (optional — skip if using cream).
- Slowly pour in milk or cream, stirring constantly to avoid lumps.
- Add rice and veggies
- Stir in cooked Cooky Choice Rice, corn, and spinach/bell peppers.
- Add salt, pepper, and herbs. Mix well.
- Add cheese
- Stir in half of the cheese and mix until melted and creamy.
- Bake it
- Pour the mixture into a greased baking dish or muffin tray.
- Sprinkle the remaining cheese on top.
- Bake at 180°C (350°F) for 10–15 minutes until golden and bubbly.
- Cool and pack
- Let it cool slightly before packing in a lunchbox.
- Serve with fruit or a boiled egg for a complete meal.
