Ingredients (Serves 2–3 kids)

  • 1 cup cooked Cooky Choice Rice (white or brown)
  • 1/2 cup boiled sweet corn kernels
  • 1/4 cup finely chopped spinach or bell peppers (optional for nutrition boost)
  • 1/2 cup milk or cream
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1 tbsp butter
  • 1 tbsp all-purpose flour (optional, for thickening)
  • Salt and pepper to taste
  • A pinch of mixed herbs or oregano (optional)

Method

  1. Prepare the base
    • In a pan, melt butter.
    • Add flour and stir to make a quick roux (optional — skip if using cream).
    • Slowly pour in milk or cream, stirring constantly to avoid lumps.
  2. Add rice and veggies
    • Stir in cooked Cooky Choice Rice, corn, and spinach/bell peppers.
    • Add salt, pepper, and herbs. Mix well.
  3. Add cheese
    • Stir in half of the cheese and mix until melted and creamy.
  4. Bake it
    • Pour the mixture into a greased baking dish or muffin tray.
    • Sprinkle the remaining cheese on top.
    • Bake at 180°C (350°F) for 10–15 minutes until golden and bubbly.
  5. Cool and pack
    • Let it cool slightly before packing in a lunchbox.
    • Serve with fruit or a boiled egg for a complete meal.
